Tonight I was just not feeling in the mood to cook. But my 9 year old son, Henry saved the day. These rissoles are simple and tasty!! Henry was able to prepare and cook these with next to no help needed. I am finding this extra time at home with one another a great time to get the kids involved in the kitchen.
500g lean mince
1 small onion
1 gralic clove
1 pack chicken noodle soup powder
half cup gated cheese
1 cup plain flour
Finely dice onion, garlic and tomato add to bowl
Add mince, egg and chicken soup powder and cheese
With clean hands, bind all ingredients together very well
Place flour on a large plate
Pick up palm size amount of rissole mixture, shape into flat ball
Place rissole onto flour plate and coat with the flour
Heat oil in frying pan – once hot add rissole
Gently fry on both sides until well cooked and crispy on the outside-
Henry served our rissoles with a lovey gravy and kaleslaw – DELICIOUS!
